These grass fed beef shank steaks (aka Osso Bucos) are a crosscut of the upper leg of the cow. They come typically around 1" -2” thick with the marrow bone in the center .
Our packs tend to come 2 cuts to a pack, each one weighing 1-2 pounds depending on size of cow at processing.
These are slow cooked type braising cuts and are wonderful in stews and soups, but can also be slow smoked or pressure cooked with a nice gremolata sauce. If cooked correctly, this cut of beef packs some outstanding flavor and is sure to please any palate.
